3 BEAN TURKEY CHILI (Just can’t get enough chickpeas, can you?!)
What you need:
1 lb ground lean turkey
1/2 red onion
3 cloves garlic (minced)
1 can red kidney beans
1 can chickpeas
1 can pinto beans
8oz tomato sauce (basil, oregano flavored, if possible)
1 tsp olive oil
1 tsp paprika
1 tsp cumin
1 pkg low sodium chili mix
2 cups water
black pepper to taste
cooking spray (optional)
Cook turkey in a large pot with oil, garlic, onion, and chopped jalapeños, until turkey is cooked.
While cooking turkey mix, grind all three beans in a chopper, after draining and rinsing them. Add to pan. Cook about 3 mins, stirring as needed.
Add in tomato sauce, water, chili mix, cumin, paprika, black pepper, and stir. Simmer about 25 minutes.
This soup is lower in sodium and high in lean protein from both animal and plants. It’s about a medium “heat” flavored soup.
Great garnishments a would be light sour cream and cheese for the top, when serving!
